2-4 oz. jars Golden Whitefish Caviar

1 Env. (1/4 oz.) active dried yeast

4 Tbsp. unsalted butter, melted

1 tsp. sugar

1/2 tsp. salt

3/4 cup all-purpose flour

3 lg. egg yolks

2 lg. egg whites

3/4 cup buckwheat flour

1 1/2 cups milk

Melted butter, for griddle

Sour cream, for garnish

Whitefish Caviar may be substituted for any other
caviar in recipes, and at
a much lower cost!

         
 
1. Heat milk in a small saucepan until lukewarm. Transfer to large bowl,                
    stir in sugar and yeast, let stand until creamy looking (about 5 minutes). 2. Whisk in flour, salt, butter, and egg yolks until smooth. Let rise,     
    covered, in a warm place until doubled (about 1 hour). 3. In separate bowl, beat egg whites until stiff and fold into batter. 4. Heat 1 tbsp. melted butter in nonstick skillet over med-low heat.
    Add batter by tablespoons, 1 inch apart. Cook for about 1 minute or
    until edges are golden brown. Turn and cook for 30 seconds. Keep in     
    warm oven, covered loosely with foil. Serve blinis topped with a dollop of sour cream and a spoonful of
Golden Whitefish Caviar. Makes 4 dozen.

PASTA WITH SMOKED SALMON AND
GOLDEN CAVIAR
"Sinfully Delicious"

4 oz. Golden Whitefish Caviar

1 1/2 lb. thin spaghetti

3/4 cup butter, plus 4 tbsp. for pasta

2 cups whipping cream

1/2 lb. smoked salmon, thinly sliced,
      cut into 1/2" pieces

White pepper to taste

1. Cook pasta until al dente; rinse and drain. 
2. Blend in up to 4 tbsp. butter to moisten drained pasta. 
3. Melt 3/4 cup butter in large skillet. Add cream and bring slowly to          
    a  boil, stirring frequently. Reduce heat to medium and cook sauce
    until reduced, about 5 minutes. 4. Add smoked salmon and white pepper. (Smoked salmon will     
    probably eliminate the need for salt.) Add pasta to sauce and
    toss gently but thoroughly. 5. Heat to warm if necessary. Serve immediately with a spoonful of     
    Golden Whitefish Caviar on top or on the side of each serving.
    Serves 6

DELICIOUS MOUNTAIN LAKE FISHERIES
WHITEFISH RECIPES

 
GRILL POACHED WHITEFISH
(Heart Smart Recipe)
 
2 lbs. boned whitefish fillets

1 med. onion sliced into rings

1 med. lemon, sliced into disks

salt and pepper

Butter Buds® (Molly McButter)
Sprinkle both sides of fillets generously with Butter Buds. Lay fillets singly on individual sheets of aluminum foil. Cover with onion rings and salt and pepper to taste. Cover onion rings with several full slices of lemon, peel included. Wrap in foil and place on charcoal grill or in broiler oven for 5-6 minutes on each side. Discard cooked lemon slices when foil opened. Decorate plate with fresh lemon slices and fresh parsley.

WHITEFISH ALMONDINE
6-8 oz. boned whitefish fillets

1  cup flour

2  eggs

1  cup milk

1  cup slivered almonds

1/4 lb. butter

Juice of one freshly squeezed lemon
Make thin batter by adding eggs to milk and beating thoroughly. Roll fillets in flour, dip in egg batter, and roll in flour a second time. Fry in light vegetable oil at medium heat for approximately five minutes on each side or until golden brown. In second smaller skillet, melt 1/4 lb. butter on medium high heat. Add slivered almonds and stir butter-almond mixture until almonds are golden brown. Remove from heat and stir in lemon juice, to taste. Put finished fillets on plates and pour almondine sauce over them. Serve immediately. Serves 2-4.
