MONTANA GOLDEN WHITEFISH CAVIAR
 
 
 
 Of the several products we produce, the most unique is our Montana Golden Whitefish Caviar. The distinctive rich apricot hue of our caviar is reminiscent of a Rocky Mountain sunrise. Because of its origin in pristine alpine waters, its slightly crunchy texture, and its mild non-fishy, non-bitter flavor, many experts agree that the quality of our caviar is truly superb. Because of their favorable impressions, our caviar enjoys the enviable distinction of being served on numerous occasions at the James Beard Foundation in New York City, one of the most prestigious chef's organizations in this country.

To assure our out-of-state customers of the utmost quality, our fresh-frozen "malossol" (low salt) caviar is shipped by one-day air in insulated packaging. By shipping our caviar frozen, the customer is given the option of either holding it in frozen storage or of thawing it for immediate consumption or sale. Our caviar freezes extremely well and has a frozen shelf life of more than a year. Once thawed, it can be safely held for up to 30 days under refrigeration. We are capable of either shipping directly to our retail clients or to their friends or customers. We eagerly invite you to taste our caviar and determine its unique merits for yourself. WHITEFISH FILLETS

All of our lake whitefish are caught by rod and reel, iced immediately, then processed into boned, skinless fillets within hours. Our fillets are then vacuum packed, 2 to a pack, and quick frozen. Upon cooking, they taste as fresh as the day they were processed.

Averaging 6 oz. each, the fillets are white, flaky, and extremely mild in flavor. The strong "fishy" taste found in many other fish species is notably absent in our whitefish. The fillets are easily substituted into any recipe calling for a white-fleshed fish. Broiled, baked, deep fried, barbecued, smoked, or poached, our whitefish fillets are an exceptional taste treat. Whether used in simple fish & chips baskets or as a delectable main entrée for more formal dining, they're truly superb.

MONTANA FIXIN'S BATTER MIX

Our delicious deep fry batter mix was originally developed for use in supermarket demonstrations of our whitefish. At the time, we had no intention of producing our batter mix for sale to the public. However, once we began using it, we were immediately struck by the large numbers of supermarket tasters who came back for seconds, requesting the batter recipe. With such a strong indication of demand, we began producing our dry batter mix for sale to the public and called it simply "Montana Fixin's." To mix our batter, just add water or flat beer and stir. It couldn't be more simple or quicker to prepare. Or perhaps you'd prefer our mix dry - as a simple dredge for your chosen meats. Either way, it's delicious on chicken, pork, fish, onion rings, zuchini, eggplant, mushrooms...or whatever!

Regional demand for our unique gourmet products has risen steadily since we began operations in 1991. Indeed, many of our growing number of steadily satisfied customers strongly encouraged us to introduce our unparalleled products to the national mail-order market. Hence this web site.

 
       TIPS FOR USING MONTANA FIXIN'S BATTER MIX

1. To make batter stick better, make sure to pat moist food items dry with a paper     towel before dredging them in batter.

2. Try simply using our mix as a dry dredge for chicken or fish, then popping the     meat into a skillet. You can thicken the dry coating even more by first dipping     your meat in a mixture of milk and egg before dredging it in our dry mix.
